Avocetta Bianca is Tenute Lu Spada's 100% Minutolo from the Salento, hand-picked on clay soils near Brindisi. Aged briefly in stainless steel and bottle, it carries a fragrant, fresh character full of white fruit and blossom.
In the glass, Avocetta Bianca shows a bright straw yellow with golden highlights. The nose is intense and broad, opening with white-fleshed fruit, mango and pineapple alongside white flowers, lavender and Mediterranean herbs, a bouquet that instantly reveals Minutolo's aromatic side. On the palate the wine is dry and medium-soft in texture, with a fine, refreshing acidity that keeps it harmonious and supple. The finish is long, with a subtle bitter note of bergamot and white pepper lingering on the palate. Serve Avocetta Bianca chilled at 8-10°C, alongside shellfish and crustaceans, a tartare or a fish dish - its freshness and aromatic intensity make it a natural companion at the table.
Tenute Lu Spada is a young winery from Brindisi, founded in 2015 between Lake Cillarese and the Adriatic Sea. It farms almost entirely organically and focuses on the native grapes of Salento, with vineyards whose setting gives the wines a distinctly fresh, maritime character.
For Avocetta Bianca, the estate turns to Minutolo, an old Puglia variety grown in the region since the year 1200 and known for its distinctly aromatic character. The vineyard sits on clay soil at sea level, with vines trained on Guyot - a combination that lends the wine its freshness.
The grapes are hand-picked in early September, at a yield of 120 hl/ha. Fermentation takes place at 16-18°C, after which Avocetta Bianca ages in stainless steel tanks with a short spell in bottle for extra balance. Like the rest of the range, this wine is certified organic.
